Pimento Cheese Sandwich- a southern tradition
I had to share this article on pimento cheese spread with you all. At the end of the article there is a recipe from the authors family; if you get a chance to try it out before me, please let me know how it goes.

I'm only a moderate fan of pimento cheese, but after reading the recipe I got pretty darn hungry. You may get a surprise this week, Des.
Des...I have fond memories of pimento sandwiches at my grandma's house...in fact i wrote a poem about it once, i will have to share it with you sometime. :)
As a follow-up...
I regret to inform you that I cannot make the recipe because HARVEY'S doesn't CARRY monterey jack cheese.
I will wing it, but still grumble for the loss of Bi-Lo.

I'm not a fan of pimiento cheese, but here's a good recipe I found for Herbed Boursin cheese spread. It's fab!
Herbed Boursin Spread
INGREDIENTS:
1 package (8 ounces) cream cheese, softened
2 cloves garlic, crushed and minced
1 tablespoon fresh parsley, minced
1 tablespoon fresh or frozen minced chives
cayenne pepper, to taste
coarsely ground black pepper
PREPARATION:
Put softened cream cheese in a large mixing bowl.
Cook garlic cloves in boiling water for 3 minutes; drain then cool for 5 minutes and put through garlic press. Add minced garlic to cheese. Add parsley, chives, and cayenne and blend well.
Let stand for 1 hour to allow ingredients to mellow. Taste and adjust seasonings, if needed. Shape into a ball and roll in coarsely ground black pepper. Serve with assorted crackers.

Ama's Pimento Cheese: (mom's mom)
Cracker Barrel Extra Sharp Cheddar Cheese Grated
Helmans Mayonaise (no salad dressing please)
Sugar (a smidgen)
jarred Pimentos
Love (her secret ingredient)
Mix in a metal bowl with a fork and enjoy on toasted bread.
